Daikon Radish Medley
There's almost nothing you can't do with these radishes! They're great raw (grated in slaw, sliced for salads or crudite), stir-fried, in soups (miso or ramen, especially), roasted, pickled, or fried in vegetable pancakes. Mix with kale, cabbage, carrots, and scallions/onions in any of the above dishes for easy winter meals. Store in a plastic bag (or equivalent) in the refrigerator for up to one month.
